Embracing the Weekend: Fresh Finds and Strategic Meal Prep

This weekend: My husband, Connor, has a rare weekend off, which means we get to dive into one of our favorite local traditions. We’re eagerly anticipating our first visit of the year to the Green City Market on Saturday. Located in Lincoln Park, it’s not just any farmer’s market; it’s a vibrant, large outdoor hub for local farmers and producers, offering an incredible array of fresh, seasonal produce, artisanal goods, and a wonderful community atmosphere. There’s something truly special about connecting with the people who grow our food and bringing home the freshest ingredients possible.

Following our market adventure, my Sunday will be dedicated to a much-needed reset: extensive meal preparation. My plan is to load up on tons of beautiful produce from the market – think leafy greens, vibrant spring vegetables, and perhaps some early berries – and then spend Sunday afternoon washing, roasting, steaming, and chopping as much as I can. This proactive approach to meal prep was a cornerstone of my routine during my Whole30 journey and proved to be incredibly effective for ensuring healthy, delicious dinners throughout the week. Unfortunately, it’s a habit that has somewhat fallen by the wayside recently, so I’m thrilled to reignite it. Preparing ingredients ahead of time drastically cuts down on cooking stress during busy weeknights, making healthy eating both accessible and enjoyable.
