After six intensive months of classroom instruction and hands-on training, my classmates and I were thrust into the crucible of a mandatory paid restaurant externship. While our school termed this period an ‘externship’ – signifying our ongoing student status and the requirement to complete a specific number of hours – the restaurant itself treated me, and I certainly felt, like a full-fledged employee.
