  • ½ cup (65 g) whole pecans, chopped into small pieces or ½ cup pecan pieces
  • 2 small Granny Smith apples coarsely grated, but not squeezed (*see notes for easy tips)
  • cups (360 mL) cold buttermilk
  • 1 large egg room temperature
  • cup (80 mL) avocado oil or vegetable oil
  • 2 teaspoons vanilla extract
  • turbinado or demerara sugar for sprinkling

Instructions 

  • Preheat your oven to a precise 400°F (205°C), ensuring the oven rack is positioned in the center. Prepare a standard 12-cup muffin pan by lining it with paper liners or generously greasing each cup with baking spray. Set this aside to be ready for the batter.
  • In a large mixing bowl, combine the dry ingredients: whole wheat flour, coconut sugar, ground cinnamon, baking powder, baking soda, and kosher salt. Whisk these together thoroughly to ensure they are well combined. Next, stir in the chopped pecans. Add the coarsely grated apple and continue to stir until the apple shreds are evenly distributed and lightly coated with the dry flour mixture. This helps prevent the apple from sinking to the bottom.
  • In a separate medium bowl, whisk together the cold buttermilk, the room temperature egg, avocado oil, and vanilla extract until completely uniform.
