As you might observe in the accompanying pictures, the almond turmeric milk, like many milk-based beverages left to sit, has a natural tendency to develop a very thin skin on its surface. It’s important to note that this skin does not, in any way, affect the delicious flavor of the drink. - 20 raw whole almonds
- 2 cups (480 mL) low-fat or whole milk
- ½ teaspoon ground turmeric
- ¼ teaspoon ground cardamom
- pinch saffron threads
- 2-3 teaspoons granulated sugar (or to taste)
- crushed pistachios (for garnishing)
Instructions
- Soak the raw almonds in very hot water for 10 to 15 minutes. Once softened, carefully peel off the skins of the almonds using your fingers. Place the peeled almonds into a high-powered blender and process until they turn into a fine powder. Then, add a couple of tablespoons of the milk to the ground almonds and blend again until you achieve a very fine, smooth paste.
- Pour the remaining milk into a small saucepan and place it over medium heat. Once the milk is warm, add the freshly prepared almond paste, ground turmeric, ground cardamom, saffron threads, and granulated sugar. Stir all the ingredients well to combine. Allow the mixture to simmer gently for 4 to 5 minutes, continuously whisking to prevent any skin from forming on the surface. Taste the milk and add more sugar if you prefer a sweeter drink.
