  • 2 tablespoons (30g) unsalted butter
  • 4 large apples (Fuji or Pink Lady) cored and cut into ½-inch chunks
  • 1 cup fresh cranberries
  • ¼ cup (60 mL) pure maple syrup
  • 1 teaspoon fresh orange zest
  • ½ teaspoon ground cinnamon
  • pinch kosher salt

Honey Yogurt:

  • 3 cups (24 oz) whole fat Greek yogurt
  • 3-4 tablespoons honey to taste

Assembly:

  • cups granola

Instructions 

  • Prepare Compote: In a large skillet, heat the butter until it is just beginning to bubble lightly. Add the chopped apples and cook for 2 to 3 minutes, stirring occasionally. Add the maple syrup, orange zest, cinnamon, and salt to the pan, and continue to cook for an additional 3 to 4 minutes, stirring often, until the apples begin to turn translucent.
  • Add the cranberries to the pan and continue to cook, stirring frequently, for another 4 to 5 minutes until they begin to burst.  If necessary, deglaze the pan with 1 to 2 tablespoons of water to loosen any bits stuck to the bottom. Remove from the heat and allow to cool completely before assembling the parfaits.
  • Prepare Yogurt: In a separate medium-sized bowl, whisk together the honey and Greek yogurt until well combined and smooth. Taste and adjust sweetness, adding additional honey if desired.
  • Assemble Parfaits: Using a pastry bag (fitted with a small round tip for a neat look) or simply a spoon, add a layer of the prepared honey yogurt to the bottom of each glass or container of your choice. Top this with a thin, even sprinkling of granola for crunch. Next, add a thin layer of the cooled cranberry apple compote. Repeat these layers until the glass is almost full.
