There were definitely moments, both during the intensive coursework and my hands-on externship, when the finish line seemed impossibly distant. Doubts crept in, wondering if I would truly make it through. Yet, despite those challenging days, the past year has flown by in a blur of learning, creating, and growing. It feels surreal to have reached this significant point in my culinary journey.

Waking up early that morning, a potent mix of nerves and exhilaration buzzed through me. This was it—the culmination of months of hard work and unwavering focus. Reaching into the top of my closet, I retrieved my special chef’s jacket, carefully preserved in plastic wrap since my very first day of school. This wasn’t just any jacket; it was my graduation-day uniform, untouched and pristine, a stark contrast to the well-worn, flour-dusted jackets that had become my daily attire.

I shook hands with Chef Francois and all four of my incredible chef instructors, each handshake a silent acknowledgment of their guidance and my perseverance. Receiving my diploma felt like holding a tangible piece of my future, a symbol of my hard-earned culinary arts qualification.

He never once complained about me being absent from dinners or most “normal” social hours, understanding the unpredictable nature of chef life. He consistently encouraged me to keep up with the blog, helping me achieve my goal of writing almost every single day. And on those particularly hard days, he’d simply go to the store to buy me purple Skittles—my ultimate comfort candy. All of this, despite being incredibly busy with his own demanding second year of medical school. His selflessness and support truly knew no bounds.
