  • 12 ounces (340g) mascarpone cheese room temperature
  • ¼ cup (30g) powdered sugar
  • 2 teaspoons vanilla bean paste (or pure vanilla extract)
  • 1 teaspoon pure almond extract
  • 16 ounces (2 pints) fresh strawberries stemmed and thinly sliced
  • 1 tablespoon (20g) pure honey
  • 3 tablespoons sliced almonds toasted
  • fresh mint leaves for garnishing (optional)

Instructions 

  • 1. Prepare the crust:  Begin by combining the graham cracker crumbs, almond meal (or almond flour), melted unsalted butter, and melted almond butter in a medium-sized bowl. Stir these ingredients together thoroughly until all the crumbs are uniformly moistened and the mixture resembles wet sand. Once combined, transfer the crust mixture into an 8-inch round tart pan with a removable bottom (*Note: The original recipe in the cookbook was designed for a 14-inch x 4-inch tart pan, but both sizes yield excellent results for this recipe). Press the crust mixture firmly and evenly into the bottom and up the sides of the tart pan. For a perfectly flat and compact crust, you can use the bottom of a small measuring cup or the back of a spoon to tamp it down. Set the prepared crust aside and refrigerate while you make the filling.
  • 2. Prepare the filling:  In a separate clean bowl, combine the room temperature mascarpone cheese, powdered sugar, vanilla bean paste (or vanilla extract), and pure almond extract. Using a whisk or a rubber spatula, stir these ingredients together until the mixture is creamy, smooth, and well combined, ensuring no lumps remain. Avoid overmixing to keep the mascarpone’s texture light. Evenly spread this luscious mascarpone filling over the prepared and chilled tart crust. Once the filling is in place, return the tart to the refrigerator and chill for a minimum of 1 hour (or ideally longer, up to 4 hours). This chilling period is crucial as it allows the filling to firm up properly, ensuring beautifully clean and neat slices when you serve the tart.
  • 3. Decorate with strawberries:  On the day of serving, prepare your fresh strawberries. Wash and carefully trim off the green stems from each berry. Slice the strawberries vertically into thin, uniform pieces. Remove the chilled tart from the refrigerator. Now comes the fun part: arranging the strawberry slices onto the creamy mascarpone filling. Feel free to unleash your creativity and arrange or decorate as desired. For a similar elegant look as seen in the photos above, start from the outer edge of the tart and arrange the strawberry slices next to each other in a circular pattern, with their pointed ends facing outwards. Continue this process, working your way inwards and slightly overlapping each successive circle of strawberry slices until the entire surface of the tart is covered with a beautiful display of berries.

    4. Finish and serve:  Once your strawberries are perfectly arranged, gently drizzle the entire tart with pure honey. This adds a lovely sheen and a touch of extra sweetness. For garnish, sprinkle with toasted sliced almonds, which provide a delightful crunch and nutty flavor. If using, carefully place fresh mint leaves among the strawberries for a refreshing aroma and a pop of vibrant color. Stir them frequently for a few minutes until they turn a beautiful golden brown and become fragrant. Be careful not to burn them, as they can go from toasted to burnt very quickly. Immediately transfer the toasted almonds to a separate bowl or plate to cool completely before using them as a garnish. This stops the cooking process and keeps them crisp.
  • Room Temperature Mascarpone: Ensure your mascarpone cheese is at room temperature before mixing. This allows it to blend smoothly with the powdered sugar and extracts, preventing lumps and creating that desirable creamy texture.
  • Clean Slicing: For perfectly clean slices, use a sharp knife that has been run under hot water and wiped dry between each cut. This prevents the filling from sticking and creates a professional-looking dessert.
