Panettone French Toast with Cranberry Compote

For many families, Christmas Day is synonymous with cherished traditions. In our home, countless small rituals unfold, and a significant number of them revolve around food, with Italian Panettone taking center stage. This beloved sweet bread isn’t just a dessert; it’s a symbol of togetherness, warmth, and the joy of the festive season.

The morning begins slowly, a gentle awakening to the quiet excitement of Christmas. My family gathers at the table, still in our pajamas, cozy robes, and fuzzy socks – the unofficial uniform of the day. There, we feast on slices of buttery Italian panettone, alongside an assortment of fresh fruits and berries, all washed down with warm mugs of hot coffee. It’s a simple yet profound ritual that sets the tone for the entire day.

After this comforting breakfast, we transition to the living room, where the real magic of gift-giving unfolds. We take turns with our stockings, then slowly open presents, savoring each moment. While some traditions may have evolved over the years, this particular sequence – Panettone breakfast followed by a relaxed present opening – has remained a steadfast and treasured part of our Christmas celebration.

The Magic of Panettone: A Holiday Tradition Transformed

How to make Panettone French Toast

Panettone is more than just a holiday staple for our family; it’s an institution. While some might go wild for Christmas cookies or elaborate pastries, our true holiday indulgence is a generous, thick slice of rich, buttery Italian panettone. Its aroma alone – a delicate blend of citrus, vanilla, and sweet bread – instantly evokes the festive spirit. For us, it truly tastes like the holidays, bringing a sense of nostalgia and comfort with every bite.

Over the years, we’ve sampled countless panettones, both store-bought and from artisanal bakeries, always searching for that perfect balance of sweetness, texture, and flavor. While I haven’t yet ventured into making homemade panettone (a challenge for another holiday season!), I’m usually a strong advocate for enjoying it in its purest form. A good panettone, in my opinion, needs little embellishment, perhaps just a slather of high-quality salted butter to highlight its inherent richness. The subtle saltiness perfectly complements the sweet, aromatic bread.

However, for this extraordinary Buttermilk Panettone French Toast, I am more than willing to make an exception. This recipe takes our beloved holiday bread to an entirely new level, transforming it into a truly decadent breakfast or brunch. To further enhance this festive dish, we’re serving it alongside a vibrant, homemade cranberry compote. This addition not only brightens the flavors but also adds a beautiful festive color and a delightful tangy counterpoint to the sweet French toast.

Why Panettone Makes the Best French Toast

How to Make Panettone French Toast: A Step-by-Step Guide

If you’ve ever had the pleasure of making French toast with enriched yeast breads like challah or brioche, you already know the secret to truly superior and decadent French toast. These breads, with their rich butter and egg content, absorb the custard beautifully, resulting in a custardy interior and a perfectly golden-brown exterior. They hold their shape and develop an incredible texture when cooked.

Now, imagine taking that concept to the next level by using panettone. This traditional Italian Christmas bread already boasts an incredibly rich, buttery, and airy crumb, further enhanced by the delightful addition of candied orange peel, succulent raisins, fragrant citron, and aromatic citrus zest. These elements are baked right into the bread, infusing every slice with complex, festive flavors that ordinary brioche simply cannot replicate. Panettone, therefore, provides a natural head start for the most exquisite French toast imaginable, offering a depth of flavor and a tender crumb that is unmatched.

Instead of merely soaking the bread in a conventional mixture of milk, eggs, and basic spices, this Panettone French toast takes a distinct and spectacular turn. The slices are bathed in a luxurious buttermilk mixture, which is thoughtfully infused with the bright notes of fresh orange zest and the warm, comforting essence of vanilla extract. This buttermilk-based custard is a game-changer; the buttermilk itself introduces a subtle, elegant tartness that expertly cuts through and balances the inherent sweetness of the panettone and the overall dish. This creates a more complex and harmonious flavor profile that is truly spectacular and memorable.

This compote is not just an accompaniment; it’s a vital component that complements the citrus-filled panettone beautifully. Its vibrant, tart notes provide a brilliant contrast to the rich, sweet bread, making this decadent holiday breakfast feel even more special and delightfully unique. The compote’s festive color also adds to the visual appeal, making it a feast for both the eyes and the palate.

If you’ve been searching for that one show-stopping, festive Christmas breakfast recipe that will impress your family and friends without requiring hours of labor, look no further. This Panettone French Toast with Cranberry Compote is it! It’s an easy-to-follow recipe that yields impressive results, perfect for creating new holiday traditions or enhancing existing ones.

Tips for Success: Crafting Your Perfect Panettone French Toast

  • Use Stale Panettone: For the best texture, slightly stale panettone is ideal. Like any good French toast, bread that’s a day or two old absorbs the custard better without becoming mushy.
  • Don’t Over-soak: Panettone is a delicate, airy bread. Dip the slices quickly, ensuring they are saturated but not waterlogged. Excess soaking can lead to a crumbly, heavy French toast.
  • Mind the Heat: Cook over medium heat. This allows the French toast to cook through and become golden brown without burning the exterior.
  • Batch Cooking: Avoid overcrowding your skillet. Cook in batches to ensure even browning and a crispy exterior.
  • Serving Suggestions: Beyond the cranberry compote, consider a dusting of powdered sugar, a dollop of freshly whipped cream, or a drizzle of warm maple syrup. A few fresh orange segments or candied orange peels can also enhance the presentation.

Classic Italian Panettone bread is transformed into delicious and festive French toast for the holidays. Instead of soaking bread in a traditional mixture of milk, eggs, and spices, the panettone is soaked in a buttermilk-egg mixture infused with fresh orange zest and vanilla extract. The buttermilk adds a subtle tartness that helps balance the sweetness of this dish.

Ingredients

Cranberry Compote (Makes ~1 Cup):

  • 8 ounces fresh cranberries
  • cup packed dark brown sugar
  • 2 thick strips orange peel
  • 1 cinnamon stick
  • cup water
  • pinch kosher salt

Buttermilk Panettone French Toast:

  • cups buttermilk
  • 4 large eggs
  • 1 tablespoon granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon fresh orange zest
  • 1 loaf Italian Panettone ideally several days old or stale
  • unsalted butter for cooking
  • warm maple syrup for serving
  • powdered sugar for garnishing (optional)

Instructions

  • Prepare the Cranberry Compote: Combine all of the ingredients in a medium saucepan. Place over medium heat and bring to a low boil, stirring occasionally. Reduce the heat to a low simmer and cook until the cranberries have burst and the mixture has thickened. Set aside to cool. Remove the cinnamon stick before serving.
  • Prepare the French Toast: In a large, shallow bowl, whisk together the buttermilk, eggs, granulated sugar, vanilla extract, and orange zest. Set aside.
  • Remove the panettone (ideally several days old or slightly stale) from the paper baking wrapper. Using a bread knife, slice the loaf horizontally into 1 to 1¼-inch thick round slices. Slice each round into half moons.
  • Heat a tab of butter in a large, non-stick skillet over medium heat until small bubbles begin to form. Right before cooking, dip the panettone slices in the buttermilk-egg mixture, turning them until they just become saturated (note: if your Panettone is very fresh, do this step extremely quickly, as the bread is delicate and can become mushy quickly). Allow any excess egg-buttermilk mixture to drip off and place in the hot buttered pan. Cook in batches to avoid over-crowding the pan. Cook the french toast until golden brown on each side, flipping carefully with a wide heatproof spatula.
  • Top the hot Panettone French toast with a spoonful of cranberry compote and serve with warm maple syrup. Garnish with powdered sugar, if desired.
