Ingredients

  • ½ cup corn starch for dusting
  • ½ cup (120 mL) cold passion fruit puree
  • 1 tablespoon + 1½ teaspoons unflavored powdered gelatin such as Knox’s
  • ½ cup (120 mL) water
  • 1 cup (200 g) granulated sugar
  • ¼ cup light corn syrup
  • teaspoon kosher salt
  • 1 large egg white room temperature

Instructions
