These shrimp tacos are delicious, super easy, and full of spice and flavor. They are also very simple in ingredient list and execution!

Ingredients

Shrimp Taco Filling:

  • 1 teaspoon ground turmeric
  • 1 teaspoon ground paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 2 teaspoons kosher salt divided
  • freshly ground black pepper
  • 1 lb (16 oz) shrimp peeled and deveined
  • 1 tablespoon vegetable oil or clarified butter

Avocado Salsa:

  • 2 avocados pitted and chopped
  • cups halved grape or cherry tomatoes
  • 3 tablespoons fresh lime juice
  • 2 cloves garlic minced
  • 1 jalapeño pepper seeded and minced
  • ¼ cup chopped cilantro leaves
  • 2 tablespoons olive oil

Assembly:

  • 8 (6-inch) taco-size tortillas, charred *I prefer the corn/wheat combination variety
  • lime wedges for garnishing

Instructions 

  • In a large mixing bowl, combine the turmeric, paprika, coriander, cumin, garlic powder, 1 teaspoon Diamond Crystal kosher salt, and black pepper. Add the shrimp to the bowl with the spices and toss to combine, ensuring each shrimp is well coated.
  • Preheat a large skillet over medium-high heat. Once hot, add the vegetable oil (or clarified butter, which adds a lovely richness) and then the seasoned shrimp. Cook the shrimp for approximately one minute per side, flipping once, until they curl into a C-shape and turn opaque with a beautiful golden-brown sear. Be careful not to overcook. Remove the shrimp from the skillet and transfer to a plate; set aside.
  • In a separate medium bowl, gently mix together the chopped avocado, halved tomatoes, fresh lime juice, minced garlic, finely diced jalapeño, and chopped cilantro leaves. Drizzle with olive oil and season the salsa generously with the remaining kosher salt and freshly ground black pepper to taste.
  • To assemble these delightful Mumbai shrimp tacos, take a warm, charred tortilla and arrange a few pieces of the spiced shrimp inside. Generously spoon the creamy avocado salsa over the shrimp. Heat for about 15 to 25 seconds per side, using tongs to flip them, until they develop light char marks and become pliable. As you char each tortilla, transfer it to the prepared plate and cover it with the linen to keep it warm and steamy for serving. This step adds a wonderful smoky depth that elevates the entire taco experience.
  • If you do not have a gas stovetop, you can still warm your tortillas in a dry skillet over medium-high heat, flipping until warm and pliable, or follow the package instructions for oven or microwave warming. While not charred, they will still be delicious.
  • Shrimp Preparation: For the best texture and flavor, use fresh, high-quality shrimp. If using frozen, make sure to thaw them completely and pat them very dry before seasoning to ensure a good sear.
  • Spice Level Adjustment: If you prefer more heat, you can include the seeds from the jalapeño in your avocado salsa, or add a pinch of cayenne pepper to your shrimp seasoning. For less heat, omit the jalapeño or use a milder pepper.
