Ingredients

  • 1 large fennel bulb
  • 1 navel orange
  • 2 tablespoons (30 mL) fresh lemon juice
  • tablespoons (22 mL) extra virgin olive oil
  • freshly ground black pepper
  • kosher salt
  • pecorino cheese shavings
  • fennel fronds for garnishing

Instructions 

  • Trim the tops of the fennel bulb, reserving a few fronds for garnish. Cut the fennel bulb lengthwise into quarters. Carefully trim out the tough core from each quarter. Using a mandoline or a very sharp knife, shave the fennel into very thin, translucent slices. Immediately place the shaved fennel in a large bowl filled with ice water for 5 to 10 minutes. This essential step will dramatically enhance its crispness and texture. While the fennel soaks, prepare the remaining ingredients.
  • To prepare the orange segments, trim both ends of the navel orange. Stand the orange upright on a cutting board. Using a sharp paring knife and following the natural curve of the orange, carefully cut off the peel, making sure to remove all of the white pith. Once peeled, hold the orange in one hand and, using your knife, carefully slice between the membranes to release individual orange segments (supremes). Set the orange segments aside in a small bowl.
